Introduction

You will work closely with the Sous Chef and Executive Chef, coordinating with front‑of‑house staff and other departments to maintain seamless service throughout the day.

Responsibilities

  • Prepare, cook, and present menu items in accordance with Accor’s culinary standards and recipes.
  • Supervise and mentor junior kitchen staff, delegating tasks and monitoring performance.
  • Maintain strict hygiene, safety, and sanitation protocols to ensure a clean working environment.
  • Monitor inventory levels, assist with ordering, and minimize waste through effective stock management.
  • Collaborate with the Pastry and Garde Manger sections to ensure timely service across all stations.
  • Respond promptly to guest requests, special dietary needs, and any operational challenges.
  • Participate in menu development, offering innovative ideas that reflect local flavors and global trends.
  • Ensure that all food is prepared within the stipulated time frames while upholding quality and consistency.
  • Assist in daily kitchen briefings, communicating priorities and any changes to the service plan.
  • Support continuous improvement initiatives, such as cost‑control measures and sustainability practices.

Requirements

  • Minimum education: Diploma (D3) or Bachelor’s degree (D4) in Culinary Arts or a related field.
  • At least 1–3 years of proven experience in a similar Chef de Partie role, preferably within a hotel or upscale restaurant.
  • Strong communication and interpersonal skills, with fluency in Bahasa Indonesia; good English (spoken and written) is an advantage.
  • Demonstrated ability to work effectively under pressure, especially during peak service periods.
  • Excellent grooming, professional demeanor, and a guest‑oriented mindset.
  • Flexibility to work rotating shifts, including weekends, public holidays, and occasional overtime.
  • Leadership potential with the capacity to coach and develop junior team members.
  • Detail‑oriented, responsible, proactive, and committed to upholding Accor’s brand standards.
  • Passion for cooking, creativity in menu execution, and a solid foundation in culinary techniques.
