Responsibilities
- Prepare and bake a wide variety of pastries, cakes, breads, and specialty desserts, ensuring each product meets the established taste and visual standards.
- Follow standardized recipes precisely while maintaining consistency in portion sizes, texture, and presentation.
- Monitor inventory levels, order raw materials, and manage stock to avoid shortages or waste, collaborating with the procurement team as needed.
- Maintain a clean, organized, and safe work station, adhering to all food safety, hygiene, and occupational health regulations.
- Operate and care for pastry equipment such as mixers, ovens, dough sheeters, and piping tools, performing routine maintenance and reporting any malfunctions.
- Develop new pastry concepts, experiment with flavors and designs, and present innovative ideas during menu planning meetings.
- Assist in training junior kitchen staff on pastry techniques, proper equipment use, and best practices for sanitation.
- Document production yields, waste, and quality checks to support continuous improvement initiatives.
- Coordinate with the front‑of‑house team to ensure timely delivery of pastries for service periods, special events, and catering orders.
- Participate in regular kitchen meetings, contribute to problem‑solving discussions, and uphold the restaurant’s brand standards.
Requirements
- Minimum education: SMA/SMK or equivalent, preferably with a focus on Tata Boga or a related culinary discipline.
- At least 1 year of professional experience in pastry production within a restaurant, hotel, or bakery environment.
- Strong knowledge of pastry fundamentals such as puff pastry, croissants, sponge cakes, tart shells, and decorative techniques.
- Proficiency with bakery equipment (mixers, ovens, laminating machines, piping bags, etc.) and ability to troubleshoot minor issues.
- Certification or additional training in pastry arts is a distinct advantage.
- Excellent attention to detail, ability to follow recipes accurately, and a commitment to consistent product quality.
- Creative mindset with a willingness to experiment and introduce new flavor combinations or visual designs.
- Good organizational skills for inventory management, batch planning, and time‑effective production.
- Strong communication skills, teamwork orientation, and the ability to work under the pressure of peak service periods.
