Introduction

We are seeking a dedicated Koki Dapur Profesional to join our dynamic culinary team and take charge of menu development, kitchen operations, and food quality standards. This full‑time position offers the opportunity to work in a fast‑paced, customer‑focused environment where creativity, consistency, and teamwork are highly valued. The successful candidate will collaborate closely with the restaurant manager, service staff, and suppliers to deliver an exceptional dining experience for our guests.

Responsibilities

  • Plan, design, and continuously refine a diverse menu that reflects current food trends and local preferences while maintaining cost efficiency.
  • Prepare, cook, and present dishes according to the restaurant’s quality standards, ensuring taste, appearance, and portion control are consistently excellent.
  • Supervise daily kitchen operations, including the coordination of prep work, cooking stations, and plating processes.
  • Train, mentor, and evaluate junior kitchen staff, fostering a culture of professionalism, hygiene, and continuous improvement.
  • Monitor inventory levels, order supplies, and manage relationships with vendors to guarantee the availability of fresh ingredients.
  • Ensure strict compliance with food safety regulations, sanitation protocols, and occupational health standards.
  • Develop and maintain standard operating procedures (SOPs) for equipment usage, cleaning schedules, and waste reduction.
  • Collaborate with the front‑of‑house team to coordinate special events, banquet services, and seasonal promotions.
  • Analyze customer feedback and sales data to adjust recipes, portion sizes, and pricing strategies for optimal profitability.
  • Maintain accurate records of production costs, labor hours, and kitchen performance metrics.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • At least 1 year of proven experience in the Food & Beverage (F&B) industry, preferably as a line cook or junior chef.
  • Ability to operate and maintain a wide range of kitchen equipment safely and efficiently.
  • Strong knowledge of culinary techniques, food safety standards, and ingredient handling.
  • Excellent time‑management and organizational skills, with the capacity to work under pressure during peak service periods.
  • Effective communication and teamwork abilities; willingness to mentor junior staff.
  • Flexibility to work Monday through Saturday, 08:00 – 17:00.
