Introduction
We are seeking a dynamic and detail‑oriented Koordinator Operasional Dapur to join our fast‑growing culinary team. The position is based in Tangerang and will play a pivotal role in ensuring that daily kitchen operations run smoothly, safely, and efficiently. This role is ideal for fresh graduates of Culinary Arts or Food Service Management who are eager to develop leadership skills in a bustling restaurant environment.
The successful candidate will coordinate all aspects of kitchen workflow, from food preparation and equipment maintenance to staff scheduling and compliance with health‑and‑safety standards. You will work closely with chefs, line cooks, and front‑of‑house managers to deliver a consistently high‑quality dining experience for our guests.
Responsibilities
- Plan, organize, and monitor daily kitchen activities to meet production targets and service timelines.
- Develop and maintain standard operating procedures (SOPs) for food handling, storage, and sanitation.
- Coordinate with procurement to ensure timely availability of raw materials while controlling waste.
- Schedule, train, and supervise kitchen staff, fostering a collaborative and disciplined team environment.
- Conduct regular equipment inspections, arrange preventive maintenance, and troubleshoot operational issues.
- Monitor inventory levels, perform stock counts, and generate reports for management review.
- Ensure compliance with local health regulations, fire safety codes, and company quality standards.
- Assist the head chef in menu planning, portion control, and cost‑analysis to maximize profitability.
- Handle customer feedback related to food quality and service, implementing corrective actions when necessary.
- Maintain accurate documentation of daily production, waste, and labor hours.
Requirements
- Minimum education: SMA/SMK or equivalent; Fresh graduates with a degree in Tata Boga (Culinary Arts) are strongly encouraged to apply.
- Age: up to 30 years.

- Strong personal presentation, honesty, discipline, and a high sense of responsibility.
- Excellent teamwork and communication skills; ability to motivate and guide kitchen personnel.
- Basic proficiency in operating kitchen equipment and understanding of food safety practices.
- Residency preference: Tangerang and surrounding areas for convenient commute.
- Willingness to work Monday through Saturday, 08:00–17:00.
