Introduction

We are seeking a motivated and skilled Staf Dapur – Penelitian & Pengembangan Dapur to join our dynamic culinary team in Palembang. This role is pivotal for creating innovative main‑course dishes that blend Western techniques with authentic Indonesian flavors. The ideal candidate will have a solid foundation in culinary arts, proven kitchen management experience, and a passion for continuous menu development.

Responsibilities

  • Develop and test new main‑course recipes, focusing on both Western and Indonesian cuisines, ensuring they meet taste, presentation, and cost standards.
  • Oversee daily kitchen operations, including mise en place, cooking, plating, and timely service delivery.
  • Manage inventory of raw materials, coordinate with suppliers, and control food waste to maintain profitability.
  • Train and mentor junior kitchen staff, fostering a collaborative environment and ensuring adherence to hygiene and safety protocols.
  • Collaborate with the Head Chef and R&D team to align menu concepts with market trends and guest preferences.
  • Maintain accurate documentation of recipes, costing sheets, and production procedures for future reference.
  • Ensure the kitchen operates efficiently during peak periods, holidays, and weekend service, adapting workflow as needed.
  • Communicate effectively with front‑of‑house teams to synchronize order flow and guarantee guest satisfaction.
  • Participate in regular kitchen audits and implement corrective actions to uphold quality standards.

Requirements

  • Maximum age: 30 years.
  • Minimum education: SMA/SMK or equivalent; a degree in Tata Boga or related culinary program is preferred.
  • At least 2 years of experience as a chef or cook in a restaurant, hotel, or catering environment.
  • Proficient in basic cooking techniques and advanced menu development.
  • Ability to create and refine main‑course dishes that combine Western and Indonesian culinary elements.
  • Willingness to work on public holidays, religious celebrations, and weekends as required.
  • Strong communication skills and the ability to coordinate kitchen workflow efficiently.
  • Residency in Palembang or willingness to relocate to the area.
  • Demonstrated time‑management and organizational abilities, with a focus on maintaining a clean, safe kitchen environment.
