Responsibilities
- Prepare, cook, and plate a wide variety of Indonesian dishes, ensuring consistency, taste, and visual appeal.
- Manage large‑scale food production for lunch and dinner services, including batch cooking and portion control.
- Maintain strict hygiene and food safety standards in compliance with local regulations.
- Coordinate with kitchen staff to organize prep work, inventory, and timely delivery of meals.
- Monitor stock levels of ingredients, report shortages, and assist in ordering fresh produce.
- Adapt recipes and cooking techniques to accommodate special dietary requests while preserving authenticity.
- Train junior kitchen assistants on basic cooking methods, knife skills, and safe work practices.
- Participate in menu development meetings, offering suggestions for seasonal dishes and promotional items.
- Work flexible shifts, including weekends and public holidays, to meet the restaurant’s operational needs.
- Maintain a clean, organized, and efficient workstation, and assist in end‑of‑day kitchen cleanup.
Requirements
- Minimum education: SMK Tata Boga or equivalent; SMA/SMK/Sederajat accepted.
- At least 1 year of hands‑on experience in the food‑and‑beverage (FnB) industry, preferably in a high‑volume setting.
- Proven ability to cook Indonesian (Nusantara) cuisine at scale.
- Strong work ethic: diligent, honest, reliable, and able to work under pressure.
- Excellent teamwork skills and the ability to communicate effectively with chefs, servers, and management.
- Effective time‑management capabilities to meet service deadlines.
- Willingness to work rotating shifts, including weekends and holidays.
- Physical stamina to stand for long periods and handle the demands of a busy kitchen.
