Introduction
We are seeking a highly motivated Koki Senior – Spesialis Masakan Internasional to join our dynamic culinary team. This senior chef will be responsible for creating, executing, and overseeing a diverse menu of international dishes that delight our guests and uphold our reputation for culinary excellence. The position is full‑time, Monday through Saturday, with working hours from 08:00 to 17:00.
Responsibilities
- Design, develop, and continuously update an international menu that reflects current food trends while maintaining authenticity.
- Prepare and plate high‑quality dishes from cuisines such as Mediterranean, Asian, Latin American, and Middle Eastern, ensuring consistency and visual appeal.
- Supervise and mentor junior kitchen staff, providing hands‑on training in cooking techniques, food safety, and presentation standards.
- Manage inventory, conduct daily stock checks, and coordinate with suppliers to ensure fresh, high‑grade ingredients are available.
- Monitor kitchen operations during service, adjusting workflow and delegating tasks to maintain efficiency under high‑pressure conditions.
- Enforce strict hygiene and sanitation protocols in compliance with local health regulations and company policies.
- Collaborate with the front‑of‑house team to synchronize service timing and address special guest requests or dietary restrictions.
- Participate in menu costing, budgeting, and waste reduction initiatives to improve profitability.
- Stay abreast of emerging culinary techniques, equipment, and global food trends, integrating relevant innovations into the kitchen.
Requirements
- Minimum education: SMA/SMK or equivalent; formal culinary training is a plus.
- At least 2 years of professional experience in an international or fine‑dining kitchen environment.
- Demonstrated expertise in a wide range of international cooking styles and flavor profiles.
- Strong communication skills; able to convey instructions clearly and collaborate effectively with both kitchen and service staff.
- High integrity, honesty, and a strong sense of responsibility.
- Proven ability to work both independently and as part of a cohesive team.
- Resilience under pressure; capable of maintaining composure and quality during peak service periods.
- Flexibility to work weekends (Monday‑Saturday) and adapt to shifting schedules as needed.
