Introduction
We are seeking a highly motivated Koki Senior – Spesialis Masakan Barat dan Asia to join our dynamic culinary team. The ideal candidate will have a solid foundation in Indonesian (Nusantara) cuisine, at least one year of professional kitchen experience in a reputable restaurant or hotel, and a passion for continuous culinary innovation.
Responsibilities
- Prepare, cook, and present a diverse menu of Western and Asian dishes, ensuring consistency in taste, portion size, and visual appeal.
- Develop and refine recipes that blend traditional Nusantara flavors with contemporary international techniques.
- Supervise and mentor junior kitchen staff, providing hands‑on training in knife skills, cooking methods, and plating standards.
- Manage daily kitchen operations, including inventory control, ordering of fresh ingredients, and waste reduction.
- Ensure strict adherence to food safety regulations, HACCP guidelines, and company hygiene protocols.
- Collaborate with the restaurant’s management team to design seasonal menus, special events, and banquet services.
- Monitor and maintain kitchen equipment, reporting any maintenance needs promptly.
- Assist in cost analysis, menu pricing, and budgeting to achieve target food cost percentages.
- Stay current with culinary trends, emerging ingredients, and new cooking technologies to keep the menu competitive.
- Participate in quality control checks and guest feedback sessions to continuously improve the dining experience.
Requirements
- Minimum education: SMA/SMK or equivalent.
