Introduction
PT. Culinary Excellence is seeking a dedicated Senior Kitchen Operations Supervisor (Staf Dapur Senior Pengelola Operasional Dapur) to join our dynamic culinary team in East Surabaya. Responsibilities
- Maintain immaculate cleanliness of workstations, cooking equipment, and storage areas in strict accordance with food safety regulations and company SOPs.
- Perform thorough washing, chopping, marinating, and pre‑preparation of all ingredients, ensuring consistency, portion control, and readiness for line chefs.
- Organize and label raw materials, semi‑finished products, and finished goods to facilitate quick retrieval and minimize waste.
- Monitor daily inventory levels, report low stock alerts, and collaborate with the procurement team to replenish supplies on time.
- Conduct daily and monthly stock opname, reconciling physical counts with system records to maintain accurate inventory data.
- Enforce compliance with the company’s Standard Operating Procedures (SOP), HACCP guidelines, and local food safety legislation.
- Assist in training junior kitchen staff on proper hygiene practices, knife skills, and safe equipment handling.
- Work closely with the head chef to optimize workflow, reduce bottlenecks, and improve overall kitchen efficiency.
- Handle pressure situations calmly, ensuring that service standards are met even during peak hours.
- Participate in periodic audits, suggest process improvements, and implement corrective actions as needed.
Requirements
- Minimum education: SMA/SMK or equivalent.
- Gender: Open to all genders.

- Work experience: At least 1 year in a professional kitchen or cooking environment.
- Willingness to work rotating shifts, including early mornings, evenings, and weekends.
- Demonstrated ability to perform under pressure while maintaining quality and safety standards.

- Excellent time‑management and organizational skills.
- Effective communication and teamwork abilities, with a focus on following instructions accurately.
