Introduction
We are seeking a talented Chef de Partie – Pastry & Bakery to join our dynamic culinary team in Bogor. This full‑time position offers a structured work week from Monday to Saturday, with hours from 08:00 to 17:00. The ideal candidate will bring at least one year of professional experience in a bakery or patisserie environment, possess a solid educational foundation (minimum SMA/SMK or equivalent), and demonstrate a passion for creating high‑quality baked goods that delight guests. This role is open to all genders and welcomes both men and women who meet the age and residency requirements.
Responsibilities
- Prepare and bake a wide variety of pastries, breads, cakes, and desserts according to standardized recipes and brand specifications.
- Develop new menu items, innovate seasonal offerings, and adapt recipes to meet local taste preferences while maintaining cost control.
- Ensure consistent product quality by monitoring portion sizes, plating presentation, and flavor balance.
- Manage inventory of raw materials, conduct daily stock checks, and coordinate with the purchasing department to minimize waste.
- Maintain strict adherence to food safety, hygiene, and sanitation standards in compliance with local regulations.
- Train and mentor junior bakers, apprentices, and kitchen assistants, fostering a collaborative and high‑performing team environment.
- Collaborate with the executive chef and front‑of‑house managers to align pastry production with service flow and guest expectations.
- Document production yields, troubleshoot equipment issues, and suggest preventive maintenance for ovens, mixers, and proofing cabinets.
- Participate in tasting panels, receive feedback, and continuously refine techniques to elevate the overall pastry program.
Requirements
- Minimum age: 19 years old; residency in Bogor is required.
- Education: Minimum SMA/SMK or equivalent.
- Professional experience: At least 1 year in a pastry or bakery role.
- Strong communication skills; ability to work independently and as part of a team.
- High level of initiative, discipline, and reliability.
- Proficiency in classic and contemporary pastry techniques, including dough fermentation, chocolate tempering, and decorative plating.
- Creativity in menu development and an eye for detail in product presentation.
- Physical stamina to stand for extended periods and handle the demands of a fast‑paced kitchen.
