Introduction
We are seeking a highly motivated Senior Cook – Professional Kitchen Specialist to join our dynamic culinary team. Responsibilities
- Develop, test, and refine menu items in collaboration with the Executive Chef, ensuring that each dish reflects current culinary trends and meets guest expectations.
- Supervise daily kitchen operations, including prep, cooking, plating, and service for a six‑day workweek (Monday‑Saturday, 08:00‑17:00).
- Train, coach, and evaluate junior cooks and kitchen assistants, fostering a supportive and collaborative atmosphere.
- Manage inventory, conduct regular stock checks, and coordinate with suppliers to maintain optimal levels of fresh ingredients while minimizing waste.
- Ensure strict compliance with local health regulations, HACCP guidelines, and internal sanitation protocols.
- Monitor food costs, portion control, and waste, providing regular reports to the kitchen manager to support profitability goals.
- Participate in special events, banquets, and catering projects, adapting recipes and workflows to suit large‑scale service requirements.
- Maintain a clean, organized, and safe work environment, promptly addressing any equipment maintenance or safety concerns.
- Contribute ideas for seasonal promotions, new product launches, and culinary innovation initiatives.
Requirements
- Minimum education: Bachelor’s degree (S1) in Culinary Arts, Hospitality Management, or a related field; a high school diploma (SMA/SMK) is also acceptable with substantial experience.
- Age: Up to 35 years old (exceptions may apply for specialized positions such as PA & Cook).
- Residency: Must reside in Diy or surrounding areas to ensure reliable attendance.
- Experience: At least 2‑3 years of professional kitchen experience, preferably in a high‑volume restaurant or hotel setting.
- Technical skills: Proficient in a wide range of cooking techniques, menu development, and kitchen equipment operation.
- Soft skills: Cheerful, helpful, strong communication abilities, leadership qualities, and the capacity to work effectively under pressure.
- Language: Good command of Indonesian; English proficiency is a plus for interacting with international guests.
- Physical stamina: Ability to stand for extended periods, lift up to 20 kg, and work in a hot, fast‑moving environment.
