Responsibilities
- Supervise and coordinate all kitchen activities, including preparation, cooking, plating, and service delivery.
- Develop and maintain standardized recipes, portion controls, and plating guidelines to guarantee consistency across all menu items.
- Manage inventory, conduct regular stock checks, and liaise with suppliers to secure fresh, high‑quality ingredients while minimizing waste.
- Ensure strict adherence to food safety regulations, hygiene protocols, and health‑code compliance at all times.
- Train, coach, and evaluate kitchen staff, fostering a collaborative environment that encourages continuous improvement and skill development.
- Collaborate closely with the front‑of‑house manager to synchronize service flow, address guest feedback, and adapt to peak‑hour demands.
- Monitor kitchen equipment, schedule routine maintenance, and troubleshoot any operational issues promptly.
- Contribute to menu innovation by suggesting new dishes, seasonal specials, and creative presentations that reflect local flavors and international trends.
- Maintain accurate daily reports on production, costs, and labor to support budgeting and financial analysis.
- Work efficiently under pressure, ensuring timely service without compromising quality or safety.
Requirements
- Minimum education: D3/D4 (Associate or Bachelor degree) in Culinary Arts, Hospitality Management, or a related field.
- Proven experience as a kitchen captain, sous chef, or senior chef in a high‑volume restaurant or resort setting.
- Strong communication skills; able to convey instructions clearly and engage positively with team members and management.
- High level of integrity, honesty, and accountability in all tasks.
- Demonstrated ability to work both independently and as part of a cohesive team.
- Resilience under stressful conditions; capable of maintaining composure during busy service periods.
- Flexibility to work six days a week (Monday – Saturday) from 08:00 to 17:00, with occasional overtime during events or peak seasons.
