Responsibilities

  • Prepare and maintain the dough mixture, ensuring consistent hydration and fermentation for optimal flakiness.
  • Skillfully stretch, fold, and flip roti canai on a hot griddle, mastering the classic technique that creates the signature crisp‑soft layers.
  • Monitor cooking temperatures and timing to achieve golden‑brown coloration without burning.
  • Maintain strict food safety and hygiene standards, including regular cleaning of cooking surfaces, tools, and equipment.
  • Manage inventory of flour, oil, butter, and ancillary ingredients, reporting low stock levels to the kitchen supervisor.
  • Collaborate with fellow chefs and service staff to coordinate order flow, especially during peak lunch and dinner periods.
  • Assist in training junior kitchen staff on roti canai preparation, emphasizing consistency and safety.
  • Participate in menu development sessions, offering ideas for new roti canai variations, sauces, and accompaniments.
  • Adhere to the shift schedule, working flexible hours including mornings, evenings, and weekends as required.
  • Document daily production figures and any equipment issues for continuous improvement tracking.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • Age range: 18–35 years.
  • Prior experience in a kitchen, particularly with roti canai or similar flatbread, is highly preferred.

  • Proficient in operating standard kitchen equipment such as griddles, mixers, and dough sheeters.
  • Strong teamwork orientation with the ability to communicate clearly under pressure.
  • High work ethic, honesty, discipline, and a sense of responsibility.
  • Willingness to work a shift system, including Monday‑Saturday, 08:00–17:00.
  • Basic understanding of food safety regulations and willingness to follow them rigorously.
