Introduction
We are seeking a dedicated Pembantu Koki Pastry to join the dynamic team at Dapur Sentral. The successful candidate will work closely with senior pastry chefs to maintain high standards of quality, consistency, and visual appeal for all breads, pastries, and traditional cakes served across our network of outlets.
Responsibilities
- Prepare a variety of doughs and batters for breads, croissants, danishes, and traditional Indonesian pastries, ensuring consistent texture and flavor.
- Design and bake visually attractive traditional cakes (kue tradisional) that meet both aesthetic and taste expectations of our customers.
- Maintain strict hygiene and sanitation standards in the pastry workstation, complying with local health regulations and company safety policies.
- Accurately record ingredient usage, update inventory logs, and communicate stock needs to the purchasing department.
- Assist senior pastry chefs in scaling recipes, portion control, and quality testing for large‑batch production.
- Participate in daily briefings to align on production schedules, special orders, and any menu changes.
- Continuously monitor oven temperatures, proofing times, and baking cycles to prevent over‑ or under‑cooking.
- Support the development of new product concepts by contributing creative ideas, flavor pairings, and decorative techniques.
- Help train new kitchen staff on proper handling of equipment such as mixers, proofing cabinets, and pastry decorating tools.
- Ensure all finished products are properly labeled, stored, and displayed according to the company’s quality control guidelines.
Requirements
- Minimum education: SMA/SMK or equivalent.
- At least 2 years of hands‑on experience as a Pastry Cook or Baker, specifically with traditional Indonesian cakes.
- Proficiency in core pastry techniques: mixing, proofing, shaping, baking, and decorating.
- Strong creative sense for product development and visual presentation.
- Solid understanding of kitchen sanitation, food safety (HACCP) and occupational safety protocols.
- Willingness to learn new methods, follow emerging culinary trends, and adapt recipes accordingly.
- Excellent teamwork skills, reliability, and meticulous attention to detail.
- Ability to follow recipes precisely while maintaining consistent taste and quality.
- Experience with kitchen equipment such as ovens, mixers, proofing cabinets, and pastry tools.
- Open to working flexible shift patterns; standard hours are 08:00 – 17:00.
