Introduction
PT Sora Bakery Group, the proud franchisee of TOUS les JOURS, is seeking a dynamic and experienced Kitchen Manager / Head Baker for our brand‑new store in Palembang. TOUS les JOURS is a celebrated South Korean bakery and pastry brand known for its artisanal breads, delicate pastries, and innovative flavor combinations. With a presence across Surabaya, Semarang, Surakarta, Yogyakarta, Medan, and Bali, we are expanding our footprint and need a leader who can uphold our high standards of quality, creativity, and food safety.
Responsibilities
- Oversee daily bakery operations, ensuring that all breads, pastries, and confectioneries are produced to TOUS les JOURS’ exact specifications.
- Develop and execute production schedules for the morning shift (05:00‑14:00), balancing efficiency with the freshness expectations of our customers.
- Lead, coach, and motivate a team of bakers, pastry chefs, and kitchen assistants, fostering a collaborative and high‑performance work environment.
- Maintain strict adherence to food safety regulations, including HACCP and local food‑handling certifications; conduct regular audits and corrective actions.
- Invent and test new product variations, adapting seasonal ingredients and local tastes while preserving the brand’s signature style.
- Coordinate with the store manager on inventory control, ordering raw materials, and minimizing waste through accurate forecasting.
- Ensure proper sanitation of equipment, tools, and workspaces; enforce cleaning schedules and safety protocols.
- Participate in continuous improvement initiatives, such as lean bakery practices, to reduce production cycle times and increase yield.
- Represent the bakery in training sessions held in Surabaya, then disseminate learned techniques to the local team.
- Prepare regular performance reports on production output, quality metrics, and labor efficiency for senior management.
Requirements
- Minimum education: SMK, D3, or S1 in Culinary Arts, Food Technology, or Patisserie (highly preferred).
- At least 2 years of proven experience as a Head Baker or Kitchen Manager in a high‑volume bakery or pastry environment.
- Demonstrated ability to produce a wide range of breads and pastries, including classic French viennoiseries and Asian‑inspired creations.
- Strong leadership qualities: energetic, fast‑learning, decisive, and capable of managing shift teams efficiently.
- Male candidates only (as specified by the client).
- Willingness to work the morning shift (05:00‑14:00) from Tuesday to Sunday.
- Knowledge of, and preferably certification in, Food Safety Regulation (e.g., HACCP, ISO 22000).
- Flexibility to attend a mandatory training program in Surabaya before store opening.
- Excellent communication skills in Bahasa Indonesia; basic English is a plus.
