Introduction
We are seeking a dedicated and enthusiastic Baker – Produksi Roti & Pastry to join our dynamic bakery team. The successful candidate will work in a fast‑paced, high‑volume environment, preparing a wide variety of breads, toasts, pastries, and specialty items in strict accordance with YEOH’s proprietary recipes and quality standards. This full‑time position offers a stable schedule on weekends (Saturday‑Sunday) from 07:00 to 17:00, providing an excellent opportunity for individuals who enjoy early‑morning production and thrive on teamwork.
Responsibilities
- Prepare and bake a diverse range of bakery products—including artisanal breads, sandwich toasts, croissants, danishes, and seasonal pastries—while adhering to YEOH’s exact recipe specifications.
- Accurately weigh all raw materials using digital scales to meet precise gramasi requirements, minimizing waste and ensuring product consistency.
- Execute each stage of dough development: mixing, autolyse, bulk fermentation, proofing, shaping, and final scoring, with a focus on texture, crumb structure, and flavor development.
- Operate and monitor ovens, proofing cabinets, and other production equipment, adjusting temperature and humidity settings as needed to achieve optimal bake quality.
- Conduct routine quality checks throughout the production line, verifying taste, texture, and visual appearance against established standards.
- Maintain a clean, organized, and sanitary work environment, complying with HACCP and local food‑safety regulations.
- Inspect incoming raw materials for freshness and quality, recording any discrepancies and communicating with the purchasing department.
- Track ingredient usage and production yields, identifying opportunities to reduce waste and improve cost efficiency.
- Collaborate closely with kitchen staff, helpers, and supervisors to meet daily production targets and accommodate special orders.
- Participate in product innovation sessions, offering ideas for new flavors, formats, or process improvements.
- Adhere strictly to all Standard Operating Procedures (SOPs) and safety protocols, reporting any equipment malfunctions or hazards immediately.
Requirements
- Minimum education: SMA/SMK or equivalent.
- Female candidates only, as per operational guidelines.
- At least 1 year of hands‑on experience as a baker or bakery helper; prior experience in a commercial or industrial bakery is highly preferred.
- Strong foundational knowledge of bread‑making principles, dough fermentation, and pastry techniques.
- Demonstrated ability to work quickly and consistently under tight production schedules.
- Excellent attention to detail, discipline, and a commitment to maintaining high hygiene standards.
- Willingness to work rotating shift patterns, including early mornings and weekend hours.
- Effective communication and teamwork skills; ability to follow instructions and contribute positively to a collaborative kitchen environment.
- Physical stamina to stand for long periods and lift moderate weights (up to 20 kg) when handling bulk ingredients.
- Proficiency with bakery equipment such as mixers, proofers, dough dividers, and deck ovens.
