Responsibilities
- Execute precise chocolate tempering techniques to achieve glossy finish, snap, and optimal melt‑in‑the‑mouth texture.
- Design and decorate a variety of chocolate‑based pastries, cakes, and plated desserts, ensuring visual appeal and consistency across all outlets.
- Conduct sensory evaluations—taste, aroma, texture, and appearance—to guarantee product quality before service or retail distribution.
- Maintain a spotless workstation, regularly sanitizing equipment, tools, and storage areas in compliance with local health regulations.
- Manage inventory of chocolate, fillings, and decorative supplies, minimizing waste while ensuring fresh stock.
- Collaborate with the culinary team to develop seasonal menus, new product concepts, and limited‑edition offerings that reflect emerging trends in the chocolate industry.
- Train junior staff on proper chocolate handling, decoration techniques, and hygiene protocols.
- Document production processes and batch records for traceability and continuous improvement.
- Adapt to high‑volume service periods, maintaining speed without compromising quality or safety.
Requirements
- Minimum education: SMK Tata Boga / Pastry (high school diploma in culinary arts preferred).
- At least 1 year of hands‑on experience working with chocolate pastries in a professional kitchen or boutique bakery.
- Strong knowledge of chocolate tempering, molding, and coating methods.
- Proven creativity in dessert plating and decorative techniques, with a portfolio of visually striking creations.
- Excellent attention to detail, ability to work quickly, neatly, and accurately under pressure.
- Solid understanding of food safety, HACCP standards, and kitchen sanitation practices.
- Effective communication skills and a collaborative mindset for teamwork across multiple outlets.
- Must reside in Bali (domicile requirement) and be willing to travel to any The RR Chocolate location.
- Flexible schedule: Monday through Sunday, 08:00 – 17:00, with occasional weekend or holiday shifts as business demands.
