Responsibilities
- Prepare and execute a wide range of tuna dishes, including grilling, searing, deep‑frying, marinating, and sashimi‑style preparations, ensuring consistent taste and presentation.
- Maintain strict adherence to food safety and hygiene standards, performing regular checks on temperature, cross‑contamination prevention, and proper storage of raw and cooked tuna.
- Manage mise en place for tuna stations, including portioning, seasoning, and arranging garnishes to streamline service during peak hours.
- Collaborate with the head chef and fellow kitchen staff to develop new menu items, seasonal specials, and promotional dishes that showcase innovative tuna preparations.
- Monitor inventory levels of fresh tuna, related ingredients, and kitchen supplies, reporting any shortages or quality concerns to the purchasing department.
- Train junior kitchen assistants on proper knife skills, handling of raw fish, and the specific cooking methods required for tuna dishes.
- Assist in daily cleaning schedules, ensuring workstations, equipment, and utensils are sanitized and ready for the next shift.
- Adapt quickly to changes in order volume, especially during weekends, holidays, and special events, while maintaining a calm and organized workspace.
Requirements
- Male candidate, age between 20 and 40 years.
- Minimum high school diploma (SMA/SMK) or equivalent; culinary certifications are a plus.
- At least 1‑2 years of professional experience as a cook, preferably with a focus on tuna processing.
- Demonstrated expertise in grilling, searing, frying, and other tuna‑specific cooking techniques.
- Ability to work swiftly, maintain a clean workstation, and deliver consistent product quality.
- Strong discipline, reliability, and a sense of responsibility in a team setting.
- Willingness to work weekends (Saturday‑Sunday) and on public holidays or special event dates.
