Introduction
We are seeking a dedicated Senior Cook – Traditional Cuisine Specialist to join our dynamic kitchen team. This role is perfect for a passionate culinary professional who excels in preparing authentic Indonesian dishes and can lead a team while maintaining the highest standards of food safety, quality, and hospitality. The successful candidate will work Monday through Saturday, from 08:00 to 17:00, and will enjoy a supportive environment that values discipline, responsibility, and a friendly attitude.
Responsibilities
- Plan, prepare, and present a wide variety of traditional Indonesian meals, ensuring taste, texture, and visual appeal meet brand standards.
- Supervise and mentor junior kitchen staff, providing on‑the‑job training in cooking techniques, hygiene practices, and proper equipment handling.
- Develop and update menu items, incorporating seasonal ingredients and regional specialties to keep the offering fresh and competitive.
- Maintain accurate inventory records, coordinate with suppliers, and manage food cost control to stay within budgetary targets.
- Ensure strict compliance with health, safety, and sanitation regulations, conducting regular kitchen inspections and corrective actions when needed.
- Collaborate with the front‑of‑house team to guarantee seamless service flow, timely order delivery, and exceptional guest experiences.
- Participate in staff meetings, contribute ideas for process improvements, and assist in scheduling shifts to optimize labor efficiency.
- Prepare special banquet or event menus, adapting traditional recipes for large‑scale production while preserving authentic flavors.
- Document and preserve traditional recipes, creating a culinary knowledge base for future staff.
Requirements
- Female candidates (as specified) aged 25 years or younger.
- Minimum education: SMA/SMK or equivalent.
- At least 1‑2 years of hands‑on experience in a professional kitchen, preferably focused on traditional Indonesian cuisine.
- Demonstrated ability to communicate clearly and courteously with team members, supervisors, and guests.
- Consistently pleasant demeanor – a “smile‑ready” attitude that creates a welcoming atmosphere.
- Strong discipline, reliability, and a commitment to performing the five daily prayers (sholat) as part of personal integrity.
- Proficient in basic kitchen equipment operation, food safety protocols, and inventory management.
- Ability to work under pressure during peak hours while maintaining quality and composure.
