Responsibilities

  • Plan, develop, and execute innovative menus that showcase both classic and contemporary cuisine, tailored to the expectations of a five‑star clientele.
  • Oversee daily kitchen operations, ensuring timely preparation and plating of dishes while maintaining the highest standards of quality and presentation.
  • Manage inventory, conduct regular stock takes, and coordinate with suppliers to secure fresh, high‑quality ingredients at optimal cost.
  • Enforce strict food safety and hygiene protocols in compliance with local regulations and international best practices.
  • Lead, mentor, and train junior chefs, line cooks, and kitchen assistants, fostering a collaborative and growth‑oriented team culture.
  • Collaborate closely with the Restaurant Manager and Front‑of‑House team to align kitchen output with service flow and guest feedback.
  • Monitor kitchen expenses, assist in budgeting, and contribute ideas for cost‑effective menu engineering.
  • Maintain the kitchen’s cleanliness, organization, and equipment maintenance schedules.
  • Demonstrate initiative by proposing new cooking techniques, seasonal specials, and promotional events.
  • Stay updated on industry trends, emerging ingredients, and culinary technologies to keep the restaurant competitive.

Requirements

  • Minimum education: D3/D4 in Culinary Arts, Hospitality Management, or a related field.
  • At least 2‑3 years of experience in a senior kitchen role, preferably within a fine‑dining or five‑star establishment.
  • Strong culinary skills with a proven track record of creating high‑quality dishes.
  • Excellent leadership abilities; able to inspire and coordinate a diverse kitchen team.
  • High level of initiative, problem‑solving capacity, and ability to work under pressure.
  • Outstanding communication and teamwork skills; collaborative mindset with front‑of‑house staff.
  • Flexibility to work six days a week (Monday‑Saturday) from 08:00 to 17:00.
  • Willingness to reside in on‑site mess accommodation to ensure seamless kitchen operations.
  • Female candidates (per company policy) who demonstrate professionalism and dedication.
  • Fluency in Bahasa Indonesia; proficiency in English is a plus.
