Introduction

We are seeking an experienced Restaurant Operations Manager to lead the day‑to‑day activities of our flagship hotel restaurant located in Prigen, East Java. The successful candidate will be responsible for ensuring that all aspects of restaurant service, from food preparation to guest interaction, meet the highest standards of quality, efficiency, and profitability. This role reports directly to the Food & Beverage Manager and works closely with the hotel’s executive team to align the restaurant’s performance with overall brand objectives.

Responsibilities

  • Coordinate daily restaurant operations, ensuring smooth service flow during breakfast, lunch, dinner, and special events.
  • Conduct routine quality inspections of food, beverages, and service delivery, and evaluate new suppliers to maintain premium standards.
  • Design, schedule, and supervise staff shifts, balancing labor costs with peak‑hour demand.
  • Assess employee performance, deliver constructive feedback, and implement training programs to boost productivity and morale.
  • Forecast future needs for kitchen equipment, consumables, and cleaning supplies, and manage inventory to prevent shortages or excess.
  • Ensure strict compliance with local sanitation, safety, and health regulations, conducting regular audits and corrective actions.
  • Maintain and enhance the restaurant’s public image, proposing initiatives to improve ambiance, menu appeal, and overall guest experience.
  • Control operating expenses by monitoring waste, optimizing purchasing, and identifying cost‑saving opportunities.
  • Prepare detailed financial reports on revenue, expenditures, and profitability on weekly, monthly, and annual bases.
  • Promote the restaurant within the local community through word‑of‑mouth campaigns, partnership events, and targeted outreach.
  • Recommend marketing strategies such as promotional discounts, social media advertising, and loyalty programs to attract a broader audience.
  • Train new hires and existing staff on best practices for customer service, menu knowledge, and safety protocols.
  • Implement and continuously improve standard operating procedures to ensure consistent, high‑quality service now and in the future.

Requirements

  • Minimum education: Diploma (D3) or Bachelor’s degree (S1) in Hospitality, Culinary Arts, or a related field.
  • At least 3 years of proven experience as a Restaurant Manager or in a comparable supervisory role.
  • Strong background in customer service management, with a track record of achieving high guest satisfaction scores.
  • In‑depth knowledge of food and beverage operations, including menu composition, ingredient sourcing, and dietary considerations.
  • Proficiency in restaurant management software (e.g., POS systems, inventory control, scheduling tools).
  • Excellent leadership, motivation, and interpersonal skills; ability to inspire a diverse team.
  • Sharp financial acumen, capable of budgeting, forecasting, and analyzing profit‑and‑loss statements.
  • Willingness to relocate to Prigen, East Java and work the schedule of Tuesday through Sunday, 09:00‑17:00.
  • Additional desirable skills: budgeting regulations, foreign language proficiency, report compilation, and service ethics.
