Introduction

We are seeking a dedicated Koki Kepala Restoran to lead the culinary operations of our prestigious five‑star hotel restaurant. This role is pivotal in delivering exceptional dining experiences that align with the high standards of luxury hospitality. The successful candidate will oversee all kitchen activities, ensure consistent quality, and uphold strict hygiene and safety protocols while fostering a collaborative team environment.

Responsibilities

  • Prepare, cook, and present menu items consistently in accordance with established SOPs and the signature standards of Onest Café.
  • Manage inventory: conduct daily stock checks, coordinate ordering, and maintain accurate records of ingredient usage.
  • Oversee raw material handling, storage, and kitchen sanitation to meet rigorous hygiene requirements.
  • Monitor taste, portion size, and plating to guarantee each dish meets the hotel’s premium quality benchmarks.
  • Maintain cleanliness and proper functioning of all kitchen equipment, ensuring compliance with local health regulations.
  • Collaborate closely with sous‑chefs, line cooks, and service staff to ensure smooth kitchen operations during peak and off‑peak periods.
  • Lead the team in a calm and efficient manner, especially during high‑volume service times, while preserving a positive work atmosphere.
  • Provide on‑the‑job training, mentor junior staff, and encourage continuous skill development.
  • Assist in menu development, incorporating seasonal ingredients and innovative concepts, with a special focus on Korean cuisine where applicable.
  • Adhere to all safety, fire, and emergency procedures, conducting regular kitchen inspections.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • At least 1 year of proven experience as a cook in a café or restaurant setting, preferably within a luxury hotel environment.
  • Strong knowledge of international culinary techniques and basic understanding of Korean food traditions (a distinct advantage).
  • Ability to work quickly, accurately, and maintain a spotless work station.
  • Demonstrated proficiency in following recipes, SOPs, and strict hygiene standards.
  • Excellent teamwork and communication skills; capable of leading a diverse kitchen crew.
  • Willingness to work flexible shifts, including weekends, holidays, and occasional night service.
  • Positive attitude, eagerness to learn, and capacity to handle light pressure in a fast‑paced environment.
  • Gender: open to all candidates; however, the role specifies male candidates for certain operational reasons.
  • Physical stamina to stand for extended periods and lift moderate weights typical in a commercial kitchen.
