Introduction

We are looking for a dedicated Senior Kitchen Staff – Kitchen Operations Management to join our bustling kitchen team. This role is pivotal in ensuring the highest standards of food quality, safety, and efficiency while supporting the overall dining experience for our guests.
Responsibilities
- Prepare all raw ingredients and pre‑mise (food prep) in strict accordance with Mamesaka’s standardized recipes, ensuring consistency of flavor and presentation.
- Assist the Senior Chef in cooking noodles, simmering broths, and artfully arranging toppings such as chashu, nori, and scallions.
- Maintain a spotless work environment by cleaning cooking equipment, workstations, and storage areas on a scheduled basis.
- Monitor inventory levels at each station, conduct daily FIFO checks, and communicate replenishment needs to the kitchen manager before service begins.
- Execute high‑volume service during peak hours, delivering orders quickly without compromising quality or safety.
- Train junior kitchen staff on knife techniques, food safety protocols, and proper station organization.
- Participate in menu development sessions, offering feedback on new broth concepts and topping combinations.
- Adhere to all health‑department regulations and internal hygiene standards, performing regular self‑inspections.
Requirements
- Technical (Hard) Skills
- Proficient basic knife skills – ability to slice chashu, nori, scallions, and other toppings with precision and safety.
- Solid understanding of food safety principles, including proper sanitation, temperature control, and FIFO inventory management.
- Physical stamina to stand for extended periods in a hot, fast‑paced kitchen environment.
- Personal (Soft) Skills
- Speed and accuracy – thrive under pressure during high‑traffic service windows.
- Strong discipline and personal hygiene; keep your station impeccably organized.
- Eagerness to learn – openness to mastering Mamesaka’s signature broth recipes and plating techniques.
- Excellent teamwork and communication, essential for seamless shift handovers.
- Administrative Qualifications
- Minimum education: High school (SMA/SMK) or equivalent; culinary or hospitality training preferred.
- At least 1 year of experience in a Food & Beverage (F&B) kitchen; fresh graduates with strong passion are also considered.
- Flexibility to work rotating shifts, including weekends and national holidays.
