Introduction

We are seeking a motivated and skilled Manajer Produksi Bakery to lead our bakery operations at our modern production facility. This role is pivotal in ensuring that every batch of bread, pastry, and cake meets our high standards of quality, taste, and safety. The ideal candidate will combine hands‑on baking expertise with strong leadership abilities to drive efficiency, manage a diverse team, and continuously improve production processes.

Responsibilities

  • Plan, schedule, and supervise daily bakery production to meet volume targets while maintaining product consistency.
  • Coordinate raw material procurement, inventory control, and storage to guarantee freshness and minimize waste.
  • Implement and enforce food safety, hygiene, and HACCP standards across all production areas.
  • Train, mentor, and evaluate bakery staff, fostering a collaborative environment that encourages skill development and accountability.
  • Monitor equipment performance, schedule preventive maintenance, and troubleshoot any mechanical issues to avoid downtime.
  • Develop new product formulations and seasonal specialties, encouraging creativity while adhering to cost constraints.
  • Analyze production data, generate performance reports, and propose process improvements that enhance yield and reduce labor costs.
  • Ensure compliance with labor regulations, health and safety policies, and internal company procedures.
  • Collaborate with the quality assurance team to conduct regular product inspections and address any non‑conformities promptly.
  • Maintain clear communication with sales, logistics, and procurement departments to align production output with market demand.

Requirements

  • Minimum education: SMA/SMK with a focus on Tata Boga or an equivalent culinary qualification.
  • Age: 17‑30 years.
  • At least 1 year of relevant experience in a bakery environment; proven hands‑on baking experience of 7 months or more.
  • Strong technical knowledge of baking processes, dough handling, fermentation, and oven operations.
  • Excellent interpersonal skills – honest, disciplined, responsible, and highly communicative.
  • Ability to work under pressure, meet tight deadlines, and manage multiple production lines simultaneously.
  • Creative mindset for developing new recipes and visual presentations of baked goods.
  • Proficiency in basic computer applications (MS Office, inventory software) for reporting and planning.
  • Both male and female candidates are welcomed; gender is not a determining factor.
