Introduction
We are seeking a passionate and creative Pastry Chef – Specialist in Cake & Sweet Dish Production to join our dynamic culinary team. This full‑time position is based in a modern, well‑equipped kitchen that serves a diverse clientele ranging from boutique cafés to large banquet events. Responsibilities
- Plan, develop, and execute a wide variety of pastries, cakes, tarts, and other sweet confections in accordance with menu specifications and seasonal trends.
- Prepare doughs, batters, fillings, and glazes, ensuring consistent texture, flavor, and presentation across all product lines.
- Manage daily production schedules, coordinating with the kitchen staff to meet peak service times while maintaining food safety standards.
- Conduct quality checks on finished products, adjusting recipes and techniques as needed to meet exacting taste and visual standards.
- Maintain an organized workstation, including proper storage of ingredients, labeling, and inventory rotation to minimize waste.
- Train and mentor junior kitchen assistants and apprentices on pastry techniques, hygiene practices, and efficient workflow.
- Collaborate with the Head Chef and menu development team to innovate new dessert concepts and seasonal offerings.
- Ensure compliance with all health, safety, and sanitation regulations, performing regular cleaning and equipment maintenance.
- Track ingredient usage and assist in budgeting to control food costs while preserving product quality.
- Participate in special events, such as weddings, corporate functions, and promotional tastings, providing customized dessert solutions.
Requirements
- Minimum education: High School Diploma (SMA/SMK) or equivalent; culinary certification is a plus.
- At least 1 year of professional experience in a pastry or bakery environment.
- Strong work ethic and reliability; must not be currently enrolled in academic studies.
- Gender: Open to all genders.
- Proficiency in fundamental pastry techniques, including dough lamination, sugar work, chocolate tempering, and decorative plating.
- Excellent time‑management skills and ability to thrive in a fast‑paced kitchen with a Monday‑Saturday schedule (08:00‑17:00).
- Good communication and teamwork abilities; able to take direction and provide constructive feedback.
- Attention to detail, creativity, and a passion for continuous learning in the culinary arts.
- Expected probationary salary: IDR 2.5‑3.0 million per month.
