We are seeking a dynamic Supervisor Operasional – Berau to lead our kitchen team in a fast‑paced hospitality environment. The position reports directly to the Operations Manager and works closely with chefs, inventory specialists, and front‑of‑house leaders to guarantee that every service runs smoothly from opening to closing.
Responsibilities
- Lead, schedule, and supervise a crew of kitchen staff, ensuring clear delegation of tasks during each shift.
- Verify that all dishes are prepared according to standardized recipes, portion sizes, and visual presentation guidelines.
- Enforce strict hygiene and safety protocols, including HACCP principles, to maintain a clean and safe kitchen environment.
- Conduct regular inventory checks, track stock levels of raw materials, and collaborate with the purchasing team to place timely orders.
- Train new hires and provide ongoing coaching to improve skill levels, efficiency, and adherence to food safety standards.
- Evaluate team performance through periodic reviews, offering constructive feedback and identifying opportunities for professional growth.
- Prepare accurate daily and weekly operational reports for the Operations Manager, highlighting production metrics, waste levels, and any incidents.
- Coordinate with the maintenance department to ensure all kitchen equipment is functioning properly and scheduled for preventive maintenance.
- Assist in menu development by providing input on ingredient availability, cost considerations, and preparation feasibility.
- Act as the primary point of contact for resolving any on‑the‑floor issues, from equipment failures to staff conflicts, ensuring minimal disruption to service.
Requirements
- Minimum education: SMA/SMK or equivalent.
- At least 2 years of experience in a kitchen supervisory role or a similar position.
- Strong understanding of kitchen operational procedures and food safety standards; HACCP certification is a plus.
- Demonstrated leadership abilities with excellent communication and interpersonal skills.
- Proven ability to manage inventory, control costs, and work closely with purchasing teams.
- Flexibility to work a seven‑day schedule, Monday through Sunday, with core hours from 08:00 to 17:00.
- Ability to train, motivate, and evaluate a diverse team of kitchen personnel.
