Introduction

We are seeking a dynamic Manajer Dapur Sentral to lead our Central Kitchen operations in North Jakarta. This pivotal role ensures that all food production, packaging, inventory control, and administrative functions run smoothly, efficiently, and in compliance with food safety standards. The ideal candidate will be hands‑on, organized, and capable of managing a diverse team that includes cooks, packers, baristas, and inventory specialists.

Responsibilities

  • Operational Leadership
    • Oversee daily preparation and cooking activities, ensuring that every menu item matches the specifications outlined in purchase orders.
    • Maintain a clean, safe, and well‑organized production environment across all workstations.
    • Coordinate shift schedules (morning, afternoon, night) to guarantee continuous coverage and optimal productivity.
  • Cook
    • Execute operational setup for the central kitchen, including equipment checks and ingredient readiness.
    • Prepare and cook menu items according to standardized recipes and quality benchmarks.
    • Perform routine cleaning of cooking areas and equipment after each shift.
  • Packer
    • Package cooked food items for distribution, adhering to portion control and labeling guidelines.
    • Re‑package dry ingredients received directly from vendors, ensuring integrity and traceability.
    • Maintain a tidy packing area and accurately tally production output per SKU.
  • Grouper
    • Receive raw materials and packaging supplies from PPIC, logging all receipts in the inventory system.
    • Sort, weigh, measure, and group ingredients according to SKU requirements.
    • Complete daily DCC (Daily Consumption Control) reports and support packers as needed.
  • Barista
    • Set up espresso stations and prepare coffee drinks as dictated by purchase orders.
    • Record daily production volumes and keep the coffee area spotless.
  • Inventory Control
    • Monitor inbound and outbound material movements, maintaining accurate stock cards.
    • Conduct daily cycle counts and monthly stock takes, producing comprehensive inventory reports.
    • Manage the flow of finished goods from the kitchen to the warehouse.
  • Administrative Support
    • Process Goods Received Notes (GRN) for all kitchen supplies.
    • Enter daily raw material usage and production results into the ERP system.
    • Generate barcode labels for product identification and traceability.
  • Team Development
    • Train new hires on safety, hygiene, and standard operating procedures.
    • Foster a culture of accountability, agility, and continuous improvement.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • Maximum age: 35 years.
  • Gender: Open to all.
  • At least 1 year of hands‑on experience in the Food & Beverage (F&B) sector, preferably in a hot kitchen environment.
  • Demonstrated experience with wok cooking, packer duties, or inventory control is highly desirable.
  • Ability to work six days a week (Monday‑Saturday) with rotating shifts.
  • Strong communication skills, meticulous attention to detail, and a proactive, responsible attitude.
  • Proficiency in basic computer applications and inventory management software.
  • Physical stamina to handle fast‑paced kitchen operations.
